Red Pepper & Goat Cheese Stuffed Chicken Breast

I decided to treat myself to a decadent lunch today–dinner doesn’t have to be the only home-cooked meal of the day!

First I sauteed some onion, then added some leftover roasted red pepper, garlic, and dried basil. At the same time I sauteed a chicken breast with black pepper. After cutting a slit in the middle (almost the whole way through but not quite!), I scooped the onion & pepper mixture in the chicken, and stuffed in some goat cheese. I think this would have been fantastic with fresh basil, and maybe some wilted spinach too. Mmmm!
