Cupcakes Galore

i was so proud of my baby cupcakes that I thought they deserved their own post 😉DSCN1058

There was nothing fancy about these cupcakes. Just a box of Funfetti cake mix and a can of sprite.

First the batter:

Then the baking:

Then the icing! The only problem with making mini cupcakes is it makes so many! The idea of icing that many cupcakes seemed a little much, so I decided to do it bakery-style with a pastry bag. (ok, a Ziploc bag) Just filled it up with the icing and cut a hole in the corner.

The finished product!

They are ADORABLE!!!! I love making cupcakes – but they can be so fiddly at times – great idea to pipe the icing on!
