Mind Dumping

I’m currently snacking on a mug of Kashi Go Lean cereal with some milk and cinnamon as I try to unwind my day from the hectic chaos of figuring out a full time job plus a double load of graduate school. Whew, I’m wiped out! (already…?)

I felt like my mind was in a million places all day long. I keep lots of to do lists and notes in several places online (email, calendars, etc) but I felt like I needed a visual of it all in one place so I could free up my mind for the rest of life.

Ahhhhh. Sometimes just writing it down is enough to get it out of your head enough to really focus on getting anything crossed off the list!!  I did finally bite the bullet and go ahead and order textbooks. My first assignment is due Friday and there’s no way I’ll have books by then…yikes.

I snacked on some Wheat Thins 5 Grain crackers as I tried to organize my new class schedule.

I never got an answer about my class, so I dropped it and found another one. I’m done wasting time!

I tried to fill out my calendar as best as I could….

It was a little disconcerting not having all the exact assignments and readings in front of me. I really want to break it all down into a set schedule, but I guess that’ll be saved for another time. 🙂

Oh, I did managed to fit dinner in, complements of the freezer.

A so-called serving of pasta just doesn’t cut it for me. As hard as I try, it just doesn’t fill me up. I tend to get around that issue by bulking it up with veggies. I love using spaghetti squash as a replacement for pasta, but the husband doesn’t so much. We compromise by throwing in a bit of whole wheat spaghetti. Last time I made it I put a batch in the freezer. I’m SO glad on nights like this. This batch also has a bunch of green peppers, onions, and some spinach, along with homemade tomato sauce.

 

Now I’m off to sleep so I can crack down on some of my assignments tomorrow!

    Honestly, the serving size for pasta is wrong, wrong I tell you! I need at least 2 servings, too.

    Haha, you’re so organized! My roommate does the same thing with calendars and her classes.

    Pasta never does it for me either. It always ends up being a 2:1 ratio of veggies:noodles.

    I hope things get less stressful for you! I”m with you though, i’m feeling the pressure already. And it helps me too to have a list down in front of me of everything that I have to do and to make a schedule.

    One serving of pasta doesn’t cut it for me either. Usually I will have to have a huge salad and then still sometimes I eat 1 1/2 to 2 servings of pasta. Oh well. You only live once and pasta is GOOD.
