Polenta Pizza Casserole

Hello holy typos in that last post. Please excuse me. Apparently my brain was a little frozen too?

So it’s actually snowing. Now we’ll just see whether or not that “massive” storm comes.


To be honest, I had no idea what I was doing when I starting making dinner. I really didn’t know what I wanted to cook, just that I wanted to cook something!

Everything I kept thinking of involved veggies I didn’t have. After starring and starring into the pantry and fridge, alternately, I starting creating some concoction. Of what, I still wasn’t sure.

I decided I wanted to steam spinach and mix it with marinara, but I wasn’t feeling pasta or rice. Then I saw the little lonely cornmeal canister at the back of the pantry. Hmm polenta….I’ve tried it once before and wasn’t impressed, but thought I’d give it another try.

I was impatient by this point so I mixed together 1/4 cup cornmeal, 1 cup of water, a little salt, rosemary, basil, and onion and garlic powder and popped it into the microwave for 2 minutes. I had no idea whether you could make polenta in the microwave or not, but for future reference, you can. Wow so easy!!

I was thinking of making a pizza of sorts….

I spread the polenta in a mini-casserole dish and stuck it in the toaster oven for a few minutes at 400 degrees. While the polenta was firming up, I put some spinach, garlic, red onion, and pasta sauce in the microwave just until the spinach wilted


Then I spread the veggie mixture on top of the polenta and covered it with some mozzarella cheese and red pepper flakes. Then I broiled it for about 5-8 more minutes.

Thus polenta casserole was created!

It was so good! Like comfort food 🙂

This didn’t really turn out as a pizza, but I’m thinking this would still make really good pizza though. Spread the polenta a little thinner, bake a little longer, voila! Oh the possibilities.

Now I’m watching Teen Mom and having a glass of wine. I’m thinking about making another batch of no bake oatmeal cookies 🙂

Yup, Teen Mom. Shouldn’t leave me home alone on Friday night in the snow 😉 I’m a sucker for babies with Mohawks.

    Yum!! I will have to try that. So so creative too, i’m impressed! many times when I think of a recipe off the top of my head like that, it flops. Sometimes it doesn’t.

    It’s snowing here too. It actually started earlier than they predicted and we’ve got a good bit so far but it’s not sticking to the roads. It’s supposed to get bad though. As long as i don’t lose power, i’m good 🙂

    What a great recipe! I’ve always wanted to try polenta but have no clue what to do with it! Will definitely have to try that!

    You could probably bake the polenta first then top and bake again? It looks pretty tasty as is.

    I am so excited to try this! I have been buying polenta pre-made in a tube at Trader Joes, but I want to try to make my own and recreate this. Thanks for the idea!
