Things I should not be allowed to microwave because they end in disaster*

1. Oatmeal

2. Eggs

3. Cheese dip

*disaster = explode all over and end up burning me

Today it the cheese dip was the culprit- hot cheese went flying all over the kitchen, me included. It got stuck to my elbow and burned it, but I got ice cold water on it right away, so not not too much damage.

I think it might be the world’s way of telling me I shouldn’t be having a third serving of cheesy dip….I ate it anyway- take that world! 😉

Dinner was much more successful- salmon with fruit salsa and a side of vegs.

Salmon with Mango & Orange Salsa

Coat both sides of salmon fillets with agave nectar. Season with garlic, salt, & pepper.

Bake at 400 degrees for about 20 minutes (until fish is opaque and flakes easily with a fork).

Salsa:

1/2 cup mango cubes

1/2 navel orange

lime juice

red pepper flakes

onion powder

1/2 tsp cornstarch

Sacrifice one wedge for juice. Mix all together and simmer on low until fish is ready.

Top salmon with salsa; serve & enjoy!

Plus navy beans, spinach, and yellow carrots.

Directions: open box. microwave. drown in Texas Pete hot sauce. eat.

Pilates is back!

Pilates class tonight was amazing. I’ve missed it so much- I can’t believe I went so long without going. Sometimes I can’t because of a schedule conflict, but a lot of times I don’t go out of sheer laziness. That’s the problem with a having a class at night- I’m usually all curled up and comfy by the time it’s time to go to class. (By the way, I do mat Pilates- I’ve never even seen one of those Pilates reformer monster machines in real life.)

One thing I love about Pilates is even if you can’t do something, or aren’t good at it, you feel powerful. I love it. At the beginning of class the instructor said “You should leave tonight feeling long, lean, and wonderful.”

I do feel long, lean, and wonderful. And hungry!

I’m now snacking on a banana and mug full of Kashi Honey Sunshine.

    The microwave can be a dangerous thing! I gave up microwaving oats a long time ago. They always always made a huge mess.

    Salmon with Agave is the bomb!!! Love it.

    Yikes, microwaves can be dangerous!!

    That salsa looks so good!!

    I haven’t taken pilates in a while, but I LOVED how I just felt taller and stronger after each class!

    I didn’t know about the foil and microwave thing…I was in high school and I totally blew up the microwave!

    I agree about Pilates- I am not very good but I love it!

    I feel the same way after yoga, it’s great! I have to watch my oats carefully or they totally explode in the microwave in the AM too.

    Oh no! My mother’s nagging voice to cover what I’m microwaving with a paper towel is always at the back of my mind, but I usually ignore it and end up making a mess too. 😉

    I explode oatmeal all the time. But I keep putting in the microwave. I guess if I’m that stupid, then I deserve a huge mess to clean up!

    Salmon always looks so yummy in pictures that I want to try it, but seafood scares me. I’ve only recently started eating crab, and things like lobster bisque. Maybe i’ll be more adventurous soon.

    cling wrap your container before you start nuking! It’ll save the mess. And I guess cut your times way down 🙂

    That salsa looks seriously yummy…. I’m definitely going to hit up my fishman and make this later this week!

    Re: oats in the microwave–poor you! I always nuke mine, and as long as I use a ridiculously big bowl no explosions/spills/disasters occur (and by ridic big I mean one of those big pyrex baking dishes that hold two quarts–oatmeal REALLY puffs up in the microwave)

    The world should never, ever try to mess with cheese dip. That’s just wrong. Also, I love your mango salsa idea – the sweet acidity must have cut through the salmon’s richness so well!
