Grand Opening Y’all

Well I wish I could say my conference was completely riveting, but it’s really not. Somehow they’ve managed to take a topic I love and grind it into the most boring, drying, painful lectures. Between presenters throwing “y’all”s between every other sentence and reading somebody else’s lecture, it was quite the long day. (Seriously it was bad- unless you’re Paula Deen it’s not cute to say y’all umpteen times a minute, I don’t care how Southern you are.)  Fingers crossed it picks up a bit tomorrow.

As soon as I walked in the door I got started on dinner.

Well, after grabbing a beer and some tortilla chips to munch on. Despite eating every last bit of food I brought with me, plus some of the fruit and things they had for breakfast, I was starving!

Dinner was the quickest & easiest thing I could come up with: pasta and veggies. I chopped and sautéed some eggplant, red pepper, red onion, sundried tomatoes, & garlic while I waited for the pasta to cook. I threw in some northern beans for some protein. I seasoned it up with every green herb I could grab…wait, let me rephrase. I seasoned it with every legal green herb I could grab. I also had half a slice of whole wheat toast with Smart Balance because it was on it’s last leg and I didn’t want to throw it away.sauteed veggies

I feel like today disappeared in a flash!! I’m already kind of stiff from sitting so much today. I tried to eat lunch quickly and get out for a walk during break, but I only had a few minutes. The mall is directly across the street from the conference, so I headed that way—I stumbled right into the grand opening of H&M!!!!!! It was quite the event- I thought there was some kind of show going on or something. The line went on forever! Apparently I walked in two minutes before the opened the doors for the first time. I love H&M, but no way would I be standing in that line.

I loved reading all of your great on the go breakfast ideas! I’m still oh so partial to a nice bowl of oats 😉 And talk about some good ideas for whooping childhood obesity in the butt- you guys are full of good stuff… the consensus seems to be bring back PE!! They mentioned today that the average PE class today (if it still exists) only gives the kids 20 minutes of activity. What a bummer. I miss the good old days of recess and tag…. I bet one day they start implementing “virtual recess” where kids can play video games instead. I’d just die… ahh!

Well, off to bed to prepare for more conferencing tomorrow!

Fight Against Fat in Kids

You never know with conferences what the lunch situation will be. The one I’m at today usually gives you a break to go grab lunch, but I always worry they’ll change the schedule or there won’t be enough time with so many people all trying to but lunch at the same time.

Just in case, I packed a lunch and brought it with me. If I don’t need it, no worries. But just in case. You know I need my food 🙂

I brought a bagel sandwich on Thomas’ Whole Wheat Bagel Thins with both peanut butter and almond butter, along with sliced bananas and sunflower seeds.

And some dried plums. (Yes, I know that means they’re prunes but it sounds less Geezer-ish to say dried plums. And that’s what the bag says, so I’m sticking with it)dried plums

Along with some whole wheat Wheat Thins. I thought they’d be similar to the Multigrain and was wondering why they offered both, but I definitely like the Multigrain better!wheat thins

And since I never know when I’ll get hungry just sitting there all day, I brought some back up snacks just in case.

I’ve mentioned I’ve been to this conference before, but this time the focus is Childhood Obesity, which is completely awesome since it’s so relevant. We’ve been talking about what we think the single best way to fight obesity in child is…of course there’s no one best answer, but it’s interesting to think about. It really is a different monster than that of adults.

Bowl ‘O Oats to Go

Today starts my three days of craziness- early morning, long commuting, conference marathon. You know how much I love my bowl of oatmeal in the morning, but I’m leaving just too early this morning to be ready for all that. I went to this conference last year and ran across the same issue, so I invented my ‘bowl of oats to go’ breakfast cookie.

This way I can take my oats with me in the car and eat them once I’m hungry and on my way to the conference. I whipped up a batch last night. Basically, it’s exactly the same as my normal morning oatmeal, except with a little whole wheat flour and some egg substitute.

Breakfast Cookie

1/2 cup plus a little more oat combo (this means oatmeal, wheat germ, flaxseed, cinnamon, nutmeg)

1/2 cup pumpkin puree

1/4 cup egg substitute

big glob of peanut butter (just shy of 1/4 cup maybe?!)

sweetener of choice (I use more Splenda or agave if I’m going to eat them as “cookies” rather than breakfast)

pecans or other nuts

(I acutually usually put in a little bit of baking soda and almond milk but I completely forgot in this batch…I’ll let you know how it turns out)

Mix together and form into cookies. Bake 10 minutes at 375.

It’s just like oats- you can add in just about anything!

This are really good topped with a swipe of peanut butter 😉

I wrapped up two cookies to take with me on my ride. They super easy to eat while driving, yet just as filling and nutritious as more normal breakfast.

I also brought some Oikos Honey Greek Yogurt to eat once I get to the conference to top off my breakfast. greek yogurt

And of course coffee. No way I’m commuting with no coffee 😉 I’ll be re-filling that immediately upon arrival!
