Grand Opening Y’all

Well I wish I could say my conference was completely riveting, but it’s really not. Somehow they’ve managed to take a topic I love and grind it into the most boring, drying, painful lectures. Between presenters throwing “y’all”s between every other sentence and reading somebody else’s lecture, it was quite the long day. (Seriously it was bad- unless you’re Paula Deen it’s not cute to say y’all umpteen times a minute, I don’t care how Southern you are.)  Fingers crossed it picks up a bit tomorrow.

As soon as I walked in the door I got started on dinner.

Well, after grabbing a beer and some tortilla chips to munch on. Despite eating every last bit of food I brought with me, plus some of the fruit and things they had for breakfast, I was starving!

Dinner was the quickest & easiest thing I could come up with: pasta and veggies. I chopped and sautéed some eggplant, red pepper, red onion, sundried tomatoes, & garlic while I waited for the pasta to cook. I threw in some northern beans for some protein. I seasoned it up with every green herb I could grab…wait, let me rephrase. I seasoned it with every legal green herb I could grab. I also had half a slice of whole wheat toast with Smart Balance because it was on it’s last leg and I didn’t want to throw it away.sauteed veggies

I feel like today disappeared in a flash!! I’m already kind of stiff from sitting so much today. I tried to eat lunch quickly and get out for a walk during break, but I only had a few minutes. The mall is directly across the street from the conference, so I headed that way—I stumbled right into the grand opening of H&M!!!!!! It was quite the event- I thought there was some kind of show going on or something. The line went on forever! Apparently I walked in two minutes before the opened the doors for the first time. I love H&M, but no way would I be standing in that line.

I loved reading all of your great on the go breakfast ideas! I’m still oh so partial to a nice bowl of oats 😉 And talk about some good ideas for whooping childhood obesity in the butt- you guys are full of good stuff… the consensus seems to be bring back PE!! They mentioned today that the average PE class today (if it still exists) only gives the kids 20 minutes of activity. What a bummer. I miss the good old days of recess and tag…. I bet one day they start implementing “virtual recess” where kids can play video games instead. I’d just die… ahh!

Well, off to bed to prepare for more conferencing tomorrow!

    bummer that the conference isn’t totally exciting. and i agree that it’s sad the average PE class is only 20 minutes. i’m pretty sure that some school have started a virtual recess deal…can’t remember where but i vaguely remember reading about it. again, so sad!

    And wow what a line!!! I can’t imagine. I don’t do crowds like that… even for some awesome clothes.

    H&M is great, but not THAT great to be standing in that line… I’ll pass… 🙂

    And even Paula Dean can wear out the “ya’ll” (as much as I love her). But I’d take that over her pronouncing “pecan” anyday.

    I totally agree that PE should be mandatory and it should be more like an hour! I love the Pete’s Strawberry Blonde by the way. YUM.
