Long, Lean, & Wonderful
Things I should not be allowed to microwave because they end in disaster*
1. Oatmeal
2. Eggs
3. Cheese dip
*disaster = explode all over and end up burning me
Today it the cheese dip was the culprit- hot cheese went flying all over the kitchen, me included. It got stuck to my elbow and burned it, but I got ice cold water on it right away, so not not too much damage.
I think it might be the world’s way of telling me I shouldn’t be having a third serving of cheesy dip….I ate it anyway- take that world! 😉
Dinner was much more successful- salmon with fruit salsa and a side of vegs.
Salmon with Mango & Orange Salsa
Coat both sides of salmon fillets with agave nectar. Season with garlic, salt, & pepper.
Bake at 400 degrees for about 20 minutes (until fish is opaque and flakes easily with a fork).
Salsa:
1/2 cup mango cubes
1/2 navel orange
lime juice
red pepper flakes
onion powder
1/2 tsp cornstarch
Sacrifice one wedge for juice. Mix all together and simmer on low until fish is ready.
Top salmon with salsa; serve & enjoy!
Plus navy beans, spinach, and yellow carrots.
Directions: open box. microwave. drown in Texas Pete hot sauce. eat.
Pilates is back!
Pilates class tonight was amazing. I’ve missed it so much- I can’t believe I went so long without going. Sometimes I can’t because of a schedule conflict, but a lot of times I don’t go out of sheer laziness. That’s the problem with a having a class at night- I’m usually all curled up and comfy by the time it’s time to go to class. (By the way, I do mat Pilates- I’ve never even seen one of those Pilates reformer monster machines in real life.)
One thing I love about Pilates is even if you can’t do something, or aren’t good at it, you feel powerful. I love it. At the beginning of class the instructor said “You should leave tonight feeling long, lean, and wonderful.”
I do feel long, lean, and wonderful. And hungry!
I’m now snacking on a banana and mug full of Kashi Honey Sunshine.

Training Re-evaluation
Cheesy dip leftovers were calling my name from the fridge for lunch.
I gladly served them up with a side of veggies!
Green Giant mix with added sundried tomatoes and Italian seasoning.
No idea what dip this is but it’s cheesy, spicy, and Tostitos scoops-able! And somebody left it here 🙂
I went back for seconds of the chips and dip…yum 🙂
Training Re-Do
When I was updating my training totals for the week, I noticed I’m really horrible at following a training plan. Some of it is because I’ve adjusted based on how I was feeling and because of weather, but some of it is because I’m just bad at following it. I purposefully decided on this plan so I would have lots of room for cross-training. Guess how much of that I’ve done? Not much.

I decided to re-do the plan in 2 ways:
1. I changed it so the mileage matched my current long runs. This also gives me more flexibility to adjust as needed and still get in adequate training miles.
(I also changed rest days to Saturday instead of Friday because I’m usually more in the mood for a rest day on Sats.
(I’m not positive this is the plan I’m going to use, just what I’ve come up with so far. I’m going to do a little more researching other plans before I update it for sure. If you have any input I’d love to hear it.)
2. Added specific cross training for the next month. (Which is as far out as I can estimate my work schedule). Maybe having specific guidelines for cross-training will make me more likely to do it.
It would also help if I remembered to LOOK at my training plan from time to time instead of making up random things in my head that I think are on there.
Ok that lunch didn’t even hold me over through this post, time to go for round 2!!
How Many Men Does it Take…
Sorry for the lack of postage last night—I wrote a lovely recap of our Super Bowl party only to find my internet is down. I’ll give you some quick highlights this morning (compliments of Barnes & Noble’s wifi) since chances are you’ve seen what I had for breakfast once or twice before (oats and coffee!).
[I apologize ahead of time for the bad pictures—my camera take crappy indoor shots]
First I have a little riddle for you. How many men (boys?) does it take to put together a Pack ‘n Play?
Two?
Three?
Three plus a girl (me) and reading the directions! Haha.
Anyways.
I debuted my homemade hummus! I’m going to try it in the blender next time- the flavor was good but the texture was just a little bit too coarse.
With carrots and tortilla chips.
I enjoyed a few of these lovely Natty Greene’s Wildflower Witbier (my favorite of their seasonal brews).
I also enjoyed a sampling of pretty much everything, frequently. Lots of dips & bites. Yum.
This was our youngest Super Bowl guest (and the reason for the Pack ‘n Play). She’s just 5 weeks and loves football as much as I do (enter sarcasm).
I have to say I’m glad the Saints pulled off a victory- I hope it helps continue the revitalization of spirit in New Orleans and surrounding area like everyone hopes it will.
Also a look back at last week’s running since it was eaten in last night’s missing post:

Thurs: 3.2
Fri: 2.5
Sun: 8.6
Total for Week: 19 18 (I can’t add)
Quite a few not-so-good shorter runs, followed by a fantastic long run!
It may be too early to tell, but aside from a little tightness in my hamstrings, I’m in pretty good shape from yesterday’s run!
