Bowl ‘O Oats to Go

Today starts my three days of craziness- early morning, long commuting, conference marathon. You know how much I love my bowl of oatmeal in the morning, but I’m leaving just too early this morning to be ready for all that. I went to this conference last year and ran across the same issue, so I invented my ‘bowl of oats to go’ breakfast cookie.

This way I can take my oats with me in the car and eat them once I’m hungry and on my way to the conference. I whipped up a batch last night. Basically, it’s exactly the same as my normal morning oatmeal, except with a little whole wheat flour and some egg substitute.

Breakfast Cookie

1/2 cup plus a little more oat combo (this means oatmeal, wheat germ, flaxseed, cinnamon, nutmeg)

1/2 cup pumpkin puree

1/4 cup egg substitute

big glob of peanut butter (just shy of 1/4 cup maybe?!)

sweetener of choice (I use more Splenda or agave if I’m going to eat them as “cookies” rather than breakfast)

pecans or other nuts

(I acutually usually put in a little bit of baking soda and almond milk but I completely forgot in this batch…I’ll let you know how it turns out)

Mix together and form into cookies. Bake 10 minutes at 375.

It’s just like oats- you can add in just about anything!

This are really good topped with a swipe of peanut butter 😉

I wrapped up two cookies to take with me on my ride. They super easy to eat while driving, yet just as filling and nutritious as more normal breakfast.

I also brought some Oikos Honey Greek Yogurt to eat once I get to the conference to top off my breakfast. greek yogurt

And of course coffee. No way I’m commuting with no coffee 😉 I’ll be re-filling that immediately upon arrival!

I’m pretty sure they have a light breakfast when we get there too, but you can never be too sure 😉

    My favorite on the go breakfast is either a smoothie or a PB&J sandwich 🙂

    Girl, that looks awesome! Just like something you might pick up at a bakery. 😀

    My favorite breakfast-to-go would probably be a peanut butter and honey and banana between two waffles. Yum!

    looks tasty, but i have a hard time giving up my warm bowl of oatmeal. it feels so hearty to sit down to a hot breakfast.
    i suppose as the weather gets better something like this would be a good option.

      Me too!! Except I wasn’t quite ready for breakfast at 4 am haha. I was missing my hot oats all day though!

    I’m crazy about breakfast, so I’ll get up way earlier than necessary just to make sure I have time for a big bowl of oatmeal. Sometimes, just sometimes, if I’m on the run (and usually know I’m eating an earlier lunch), I’ll grab a granola/nutrition bar. But I don’t like it… neither does my stomach.

    Looks awesome!! My favorite on the go breakfast is an egg sandwich. I take 2 peices of oasted cinnamon raisin bread and add some applebutter and then smush scrambled eggs inbetween. Wrap it up in foil and good to go. SO GOOD!

      Apple butter & eggs? I never would’ve thought that’d work together…. I might need to try it just to see for myself! 😉

    Good idea. I have a smoothie every morning and on a workday I have another for lunch as I just double the ingredients in my blender.

    Today’s was 1/3 oatmeal,1/2c yogurt,1/4c sunflower seeds, 2c brocolli(out of fruit) and 1sc of protein powder.

    Those look great! My favorite on the go breakfast is definitely a smoothie. If I know I’m going to be in a huge rush I’ll make it the night before and put it in the freezer. By the time I get to work it’s perfectly defrosted!

    I make a similar pancake but haven’t tried baking the ingredients like a cookie. Love the idea and it would be perfect for me when i’m low on time or for my hubby when he doesn’t know what to eat in the morning. Thank!
